I'm trying to get some expansions played from my collection, but these games should be learnable with expansions even if you have not played them before.

I'll start off with two rounds of the Honor & Duty expansion from Flash Point: Fire Rescue, playing each side of the board once (Airplane and Subway Station).

This is one of my favourite Euros... no randomness, just strategy.  Great theme, too.

I'll be adding the Tu Di Gong shrine, which is another building that lets you make double progress if you win this as well as another building during the auction phase.  It's been out for a few years but I only got a copy a few weeks ago.
